Lasagna

1 lbs ground beef
1 med onion, chopped
4 garlic cloves
1 can (16oz) stewed tomatoes
2 can (6oz) tomato paste
1 can (10 3/4oz) tomato puree
1 tbsp dried basil

3 c cottage cheese
1 1/2 c parm cheese
2 lg eggs, slightly beaten
2 tbsp fresh parsley
1/2 tsp salt
1/2 tsp pepper

1 pkg lasagna noodles
1 lbs moz cheese slices

Cook noodles al dente while mixing other ingredients.

Cook beef, garlic and onions together. Drain grease. Stir in tomatoes, paste, puree, and basil. Simmer 30 minutes.

Combine cottage cheese and next five items.

Place half of the noodles in the bottom of your casserole dish. Spread 1/3 to half the cottage cheese mixture on top of noodles. Top with half of the cheese slices.
Spoon meat mixture over cheese.
Remaining noodles, then cottage cheese mix, and then cheese slices go on top.

Bake 40 minutes at 375*

~The layering can sometimes get complicated. Just remember to put noodles on the bottom!!

Again, this is a fabulous recipe to freeze in large quantities. :)
