Caesar Chicken Casserole

Another great freeze ahead meal!

2lbs cooked chicken, cubed
1/2 c red bell pepper, chopped
1/2 c green onions, chopped
1/3 c light creamy Caesar dressing*
1/2 c chicken broth
1 1/2 c Moz cheese, grated
1-12oz pkg tubed pasta, slightly undercooked
1/4 c croutons

Top with crushed croutons. Bake at 350* for 30 minutes or until bubbly and brown.

~When freezing this recipe, omit the croutons until the day you thaw and bake.

*Editor's note: Next time I make this I will be adding more Caesar dressing. It was a bit dry for our liking**. Great taste though!!

**Another friend of mine made this. She added a bit more dressing to the recipe before baking and then a little bit to her bowl after she dished it up and said it was perfect.
